Parents' visit has been a tasty treat

OK, I promised you a couple recipes last week since my parents were coming to town so I won’t disappoint.

Mom brought her laptop that is now home to some of her favorite recipes. She also came bearing gifts — a loaf of Sweet Potato Loaf Cake and a bag of breakfast muffins.

Today I have the recipes for the cake and also an apple crisp that Autumn has been making.

Sweet potato loaf cake

11⁄2 cups sugar

1⁄2 cup vegetable oil

2 eggs

1⁄3 cup water

13⁄4 cups flour

11⁄2 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon baking soda

1⁄2 teaspoon salt


1 cup cooked sweet potatoes*

1⁄2 cup pecans, chopped

1⁄2 cup raisins


Mix all ingredients well. Spoon batter into two greased and floured 1-pound coffee cake or loaf pans. Bake for 1 hour at 350 degrees. Cool in pans for 10 minutes. Remove from pans and allow to cool.

*Mom has also tried this recipe with zucchini, pumpkin and butternut squash and said the butternut squash version is her favorite.

Apple Crisp

This recipe was originally given out during an Artwalk presentation at Coos Head Food Store.

Topping

11⁄2 cups brown sugar

11⁄2 cup oats

1 cup flour

3⁄4 cup butter

6 large apples

1 cup sugar

cinnamon to taste


Coat sliced apples with a good amount of cinnamon and a small amount of sugar. Mix topping ingredients together — use softened butter, put on top of apples. Press down.

Bake at 350 degrees for about 45 minutes. Add lots of walnuts.

Last Friday, a few of us found ourselves in the middle of a pizza shortage.

My brother from Monrovia, Calif., came up to visit while the parents are here, so we decided to go out for pizza a little after 8 p.m. on Friday night.

Living closest to Winchester Bay, we tried Bedrocks on the Bay, only to drive up and find the building dark.

Still wanting pizza, we headed up the highway to Bedrocks in Reedsport and learned that the Winchester Bay location was closed because a water connection behind the coffee machine had broke and left standing water.

So everyone did the same thing we did and came to the Reedsport location, where they were all out of pizza dough by 8:45 p.m.

The five of us ended up at Aztlan on the north side of town and enjoyed a fine meal.

(The sign out front at Bedrocks by the Bay said they would reopen for regular hours today.)
