Baked beans
This is a recipe from Mom’s mom. Ann uses it at most holidays and will be making it again this year for Easter.
2 pounds navy beans
1⁄2 teaspoon soda
1⁄2 teaspoon salt
6 tablespoons of molasses
2 or 3 handfuls of brown sugar
6 ounces salt pork
Soak navy beans overnight. In the morning, don’t drain the beans, put them on the stove and bring them to a boil. Add 1⁄2 teaspoon soda and boil about 3 to 5 minutes.
Drain water and add enough fresh water to just cover the beans. Put back on the stove and add salt, molasses, brown sugar and salt pork. Bring back to a boil.
Place pot in a 350 degree oven for 5 to 6 hours, adding water when needed as it cooks down.
Mom’s meat loaf
2 pounds ground beef
3 eggs
2 dashes Worcestershire sauce
2 or 3 dashes tabasco sauce
11⁄2 cups crushed potato chips or 1 cup oatmeal
To taste: Onions, bell peppers, salt, pepper and garlic.
Mix all ingredients and place in a loaf pan. Place two slices of bacon on top and two tomato slices. Bake at 350 degrees for 11⁄2 hours. Remove tomatoes before slicing and serving.
